Seafood Chowder Recipe
Here is a seafood chowder recipe that can be the base for many different combinations of fish.

2 lb (900g) white fish - haddock or cod skin on
3/4 pint (450ml) water
lemon rind
salt and pepper
1 onion peeled and chopped finely
1lb (450g) peeled, diced potatoes
1/4lb (125g) bacon - chopped
1 oz (25g) flour
1 pint (600ml) milk
1 oz (25g) butter
Skin and bone the fish and cut into strips.
Put the fish trimmings, water, lemon rind, salt and pepper into a pan. Simmer for 30 mins, then strain.
In another pan, fry the bacon until the fat runs. Add the onion and cook gently. Add the potato and coat in the fat.
Sprinkle in the flour and stir well.
Gradually add the hot strained stock, stirring all the time and cook for about 25 mins.
Add the fish and cook a further 5 mins.
Heat the milk and butter and add very carefully to the soup when the potatoes are soft.
Serve at once with crusty bread.
