This is one of my favorite lemon pepper fish recipes.
Cod fillets marinaded for 30 minutes in lemon and chopped pepper and then baked in the oven - simplicity itself.
Any firm white fish would substitute here - try basa fish which is very popular at the moment. River Cobbler is something that's being marketed in the UK at the moment and is a type of basa fish.
A lot of people complain that fish can be a little bland - this marinade will make it a bit spicier.
You could serve this with some new boiled potatoes, fresh broccoli and cauliflower dotted with butter - it's absolutely delicious - the pepper adds a lovely 'bite' to the flavor of cod.
Lemon Pepper Cod
4 fillets of cod, skinned and boned
Pinch of salt and fresh black peppercorns
1 lemon - juiced
1 chilli pepper - deseeded and finely chopped
3 finely chopped scallions (spring onions)
1 tbspn olive oil
Place the cod fillets in an oiled ovenproof dish - season with salt, crush the peppercorns and add the lemon juice.
Sprinkle the chopped pepper, scallions and oil over and then rub into the fillets - both sides.
Leave to marinade for 30 minutes or so, turing half way through.
Put some calabrese (broccoli) florets in the baking dish to cook at the same time.
Bake in the oven (Gas Mark 5, 375 F or 190C) for 20 to 30 minutes until the fish is cooked - when it begins to flake.
You could microwave this dish for 10 to 12 minutes - turn the fish halfway through.
A simple, straightforward way of cooking cod.
Cook's Notes Any fish at all would go well with this cooking method. There's a bit of spice from the chilli and fragrance with heat from the black peppercorns, which would enhance the taste of many different types of fish. Salmon steaks would be lovely as the lemon cuts through the oiliness and the chilli and pepper add some extra flavour. I have a rainbow pepper mill which I love to use, it adds a bit of colour to food. It's a mixture of different coloured peppercorns and is quite novel. |
